About the Owners
Owner Marc Pauvert has had a passion for food since he was a young boy in France. On his resume his career objective reads:
"To open a French Bistro serving a combination of regional, classic cuisine of the Alps and lighter, healthier "Spa Cuisine" from America. It would also be advantageous to the bistro to have an adjoining Charcuterie to provide retail gourmet food-soups, salads, entrees and desserts for lunch & dinner." Marc has achieved this through The Epicurean.
Marc has an extensive background including owner of Charcuterie Francaise in Philadelphia (3 retail locations), Owner ofPour Vous, gourmet food shop, director of production in a major wholesale food manufacturing company where he was responsible for world-wide exports, Manager of a large meat company and as a chef butcher. He has also apprenticed in Cholet, France learning to make sausages, pates & fancy cuts of meat.
Along with his years of experience Marc also has Trade Master Degree's for both Butcher and Charcuterie.
Working along side Marc is his wife Rebecca Pauvert who also has extensive experience. Rebecca and Mark have both been featured in many articles and won several awards in their careers.
Rebecca's experience includes; Owner & Executive Chef at Charcuterie Francaise in Philadelphia, Chef at Knaves of Hearts restaurant in Philadelphia, Owner & Executive chef at Pour Vous in Philadelphia and much more.
